New Year Kicks Off with Yusheng, or Lo Hei
Yusheng (raw fish salad), a New Year's dish considered lucky, is eaten during the Lunar New Year in Singapore. The salad consists of shredded daikon, carrots, cucumbers, ginger, and other vegetables; crackers; and the main ingredient: thin slices of raw fish (usually salmon) sprinkled with a sweet, slightly sour dressing.
When the salad is ready, everyone at the table stands up and mixes the yusheng with chopsticks. Yusheng is also called lo hei, and true to its meaning (dipping up), the vegetables and fish piled on the plate are picked up with chopsticks while saying what one wishes for that year. It is said that wishes said in a loud voice while tossing the salad high in the air will be fulfilled.

Singapore's Ever-Changing Face
Singapore's population has grown rapidly in recent years, from approximately 4.14 million in 2000 to about 5.07 million in 2010. The government's active acceptance of immigrants is believed to be behind this. In tandem with this situation, a succession of new buildings and entertainment facilities has been built, serving to spur further population growth. Two large resort casinos opened last year. People say that employment for tens of thousands of people was created, with tens of billions of Singapore dollars in economic benefits. Gardens by the Bay, a botanical garden; River Safari, a river-themed wildlife park; and other tourist facilities are scheduled to open one after another from here on out as well.
Lee Kuan Yew, referred to as the Founding Father of Singapore, won a seat in the recent election; the fact that he is still active at 87 is surprising. It was a one-party domination up to now, but the opposition gained 6 of 87 seats in this election. You might think that it was just six seats, but it was widely reported in the country as a historical watershed.

Entertainment That Packs a Punch
Marina Bay Sands is one of the two casino resorts that opened last year. Of note is the rooftop garden, which links the 55-story towers 200 meters above ground. Here, you can enjoy the infinity-edge pool, the world's highest. The other casino resort is Resorts World Sentosa, located on the north side of Sentosa Island. It opened in January of last year and is the country's first domestic casino. Universal Studios is linked to the hotels and casino and is the most major attraction. I rarely go there, but it might be good that this one form of leisure is so accessible.
In addition, numerous spectators attend the only Formula One Grand Prix race held at night, a U.S. LPGA tournament that draws top golfers from around the world, and other action-packed live events.

Original Singaporean Curry
One food item found especially in Singapore is fish head curry, made with authentic Indian curry spices and a large fish head. An Indian who came to Singapore from Kerala State in India's southwest created this dish in the 1950s. He hit upon the idea in Singapore when he saw severed heads thrown away at a fish market, making it full-fledged Singaporean cuisine. It is said that such curry does not exist in India. Although spicy, it has a very rich, tasty fish broth and is delicious. You should definitely give it a try.
